2021 Spring will be welcome for sure! I spotted a tiny dandelion blooming under a bit of dirty snow The yellow dandelion flower is one of the first flowers (or weeds!) of spring. While the yellow blossoms pop up in many yards as unwanted guests, dandelion greens can be the mainstay of a delicious and healthy salad. As I was looking online for an appropriate image of a dandelion, I ran across the site “Great Depression Cooking”. The star was Clara, a woman who had grown up during the 1930’s. Clara, her parents and siblings knew the best way to stretch meals deliciously and cheaply.
Clara’s recipe for dandelion salad was exactly the same as the one my Aunt Marie used to prepare for us in the springtime!

When Spring really gets here, we are going to try Clara’s dandelion salad! David isn’t quite as excited as I am at the prospect of eating dandelions. I am coaxing him with the promise of pizza to go with the salad. No doubt both will be scrumptious!
